Butter biscuits in a flash (thanks, air fryer)

Butter up your loved ones in 10 minutes with these easy to bake and delicious butter biscuits, baked in the Instant Vortex air fryer.

If you’re after a quick, no-fuss treat, these air fryer butter biscuits are just the thing. Light, golden and perfectly flaky, they come together in minutes and cook up beautifully in the air fryer.

A lot of people feel unsure about using an air fryer for baking, especially when it comes to sweet treats. It’s easy to see why – most of us still associate air fryers with chips, chicken or anything crispy and savoury. The idea of baking biscuits, cakes or pastries in what’s essentially a mini fan oven can feel a bit odd at first. There’s a fear that things will dry out, cook unevenly, or just not turn out like they would in a traditional oven. And because baking feels a bit more precise, people tend to stick to what they know.

But once you get the hang of it, baking in an air fryer is actually far simpler than it seems. The heat circulates quickly and evenly, meaning your baked goods often cook faster and with a better crust or finish. You don’t have to wait for the oven to preheat or worry about turning on the whole kitchen just for a small batch. Recipe compliments of Instant Pot.

 

Ingredients

  • 250 grams of room temperature butter (soft to the touch)
  • 3/4 of a cup of caster sugar
  • 1 large egg
  • 1 teaspoon of vanilla essence
  • 1 teaspoon of baking powder
  • 3 cups of cake flour
  • Hundreds and thousands (for decorating)
  • Chocolate vermicelli and cut-up cherries (for decorating)

Method

  1. In a bowl, combine your butter and sugar, mix well until incorporated.
  2. Add the egg and vanilla essence and beat until combined, about 1 minute.
  3. Add the flour and baking powder and gently bring all ingredients together by hand until a soft dough is formed.
  4. Cling wrap and place in the fridge for 20 minutes.
  5. Switch on your air fryer and set it up for 8-10 minutes at 185 degrees.
  6. Prepare plates with hundreds and thousands, chocolate vermicelli and cherries.
  7. Line the air fryer with baking paper or simply lightly grease with butter.
  8. On a clean surface dusted with some flour roll out the dough to half a cm thickness and cut with cookie cutter and place each one upside down on the hundreds and thousands and on the chocolate vermicelli, then gently lift, turn the cookie and place inside the air fryer and bake for 8-10 minutes or until the edges are a golden.
  9. Remove from the air fryer and cool completely.
